Picnic Extravaganza

Warm spring temperatures and lush green grass are making me crave a good picnic! There's truly nothing better than getting away from all the noise and retreating to a quiet, shaded outdoor spot with good company. I've rounded up a collection of picnic-appropriate recipes below, including an easy dip recipe, several hearty salads (including a vibrant, mayo-free potato salad!), delicious wraps and, of course, dessert. Personally, I would simply pack up big portions of bean or quinoa salad and a few of Joy's four-ingredient peanut butter cookies. Whether you are aiming for ease or four-course picnic extravaganza, I have you covered!
Before you start planning, I'd like to share a few quick considerations for picnic meals. Most importantly, you don't want to let food sit out in the heat for long, especially foods containing meat or mayonnaise (like the BLT wraps). On really hot days, food can start to spoil in just an hour, so be sure to keep your food in an ice-packed cooler until you're ready to eat. When it comes to dessert, keep in mind that chocolate is liable to melt on warm days. Use stainless steel bottles to bring along mixed drinks; plastic containers can leach chemicals or unpleasant tastes into your drink. Lastly, when it comes to food storage, I prefer to use sturdy glass containers like mason jars, Smartlock glass containers or Crate and Barrel's working jars with lids. They are all inexpensive, eco-friendly and durable options!
